Texas Cookbook . . . . .�
. . . . . is a unique Texas cook book featuring 247 prize-winning,
sizzlin� Tex-Mex and old-fashioned country recipes, as well as a
chapter on Arts & Crafts ideas and a mini-autobiographical sketch
of happy memories of life in the grand old Lone Star State of
yesteryear. Recipes include favorites submitted by former Governors,
Senators and other officials from Texas, and personalities including
Lady Bird Johnson and Liz Carpenter. First published in 1982,
"Mimi�s Damma Hot Texas" has been republished, corrected, updated
and revisited for clarity. (Yes, we did leave a few mistakes the first
time around. Probably this time too.)
My wife has a cookbook library of some 400 books, but nine times
out of ten she uses her own "Mimi�s Damma Hot Texas" to cook for
her family. Need I say more?

By the way, I have to tell you this. (My wife didn�t want me to say this,
but I think it�s funny!) When we were promoting the cookbook back in 1982,
we wanted to advertise it in the National Enquirer. Would you believe
that those sanctimonious bigots wouldn�t accept it unless we removed the
word Damma from the title! Folks, I gotta tell ya; you haven�t lived
until you�ve been banned by the �National Enquirer.�
Okay, how about a sample? This recipe is so simple that even the cook
who scorches water when they boil it will succeed:
Simple Casserole
2 lbs stew meat, boneless
1 can cream of mushroom soup
1 envelope Lipton's onion soup mix
� cup water
Combine all ingredients in a casserole dish, cover and bake at 350 degrees for 3 hours. (No other seasoning is necessary.) Simple, but very good.
Here is another easy dish:
Good 'n Easy Enchiladas
1 can chili without beans
1/2 cup chopped onions
2-1/2 cups shredded chedder cheese (mild or sharp)
tortillas ('bout a dozen.)
Place 2 Tbsp. chili, 1 tsp. onion and 2 Tbsp. cheese down the center of each tortilla. Roll each tortilla and place, seam down, in a greased 10" by 6" baking dish. Cover rolled tortillas with any remaining chili, onion and cheese.Bake at 350 deg. for 15-20 minutes. (You can make ahead of time, cover and refrigerate. Then, bake 25-30 minutes or until thoroughly heated.)
Although these recipes are very simple, don't be fooled into thinking that the rest are likewise simplistic. There is, for example, a three-page recipe for a fantastic Dobos Torte. However, this cookbook is especially useful for young cooks, like your son or daughter away from home for the first time at college. Happy eating!
